- 1 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 green apple
- 1 cup almond milk
- 3 egg whites
- 1 tsp vanilla
- 2 tsp oil
in a small bowl, mix dry ingredients (flour, powder, cinnamon, salt, nuts.
use a cheese grater to grate the apple, throw into a big bowl.
Add oil, eggs, vanilla and milk to the grated apple and whisk until smooth.
add in dry ingredients, and mix ONLY UNTIL THERE ARE NO DRY SPOTS. DO NOT OVER MIX.
I use a big serving spoon, but you can use whatever you want for whatever side pancakes you want, but pour onto a pan at a medium heat. (I have this awesome caphalon pan, so I don’t need spray/butter.
Cook until light golden brown on both sides!
and voila! you get these awesome, instagrammed pancakes!
Serve with syrup and walnuts! on top!
- for more of an apple “fritter” type pancake, use 1/2 cup of flour and add another grated apple.
- for less fluffly pancakes, use 1/2 cup whole wheat flour, 1/2 cup regular flour.
